Priyanka Naik - self-taught Indian vegan chef and Food Network Champion will release her debut cookbook titled The Modern Tiffin.
The Modern Tiffin showcases Priyanka’s love for recipes where vegetables are the center of attention and not a forgotten side dish. The cookbook features fifty-five original recipes covering a wide array of global dishes, with each chapter exploring a different part of the world —from the Italian Tiffin, which uses chickpeas and garam masala to create a new bruschetta, to the American Comfort Tiffin, which includes a Southern riff on a traditional Indian dessert Gulab Juman.
As Priyanka shares versatility through delicious and innovative vegetable-focused recipes, she really taps into her childhood, travels to nearly forty countries, and life as a first-generation, Indian-American in New York City. With helpful tips throughout, including several focused-on sustainability, Priyanka shares recipes accessibly proportioned for 2 (instead of the traditional 4-6), like Bucatini à la Pumpkin with Pink Peppercorn and Pistachio, Green Chutney Quesadillas, Chili-Maple Skillet Cornbread, Cardamom Sweet Tea Spritzer, Bondi Blue Tea Cakes and much more.
